If you ask me what is my favourite quintessentially British treat, I will sure reply scones! In a heart beat! Scones originated in Scotland around the 1500s, and today are an essential part of any British afternoon tea. It just wouldn't be the same without them. Scones are traditionally served with clotted cream and fruit jam, along with a nicely made cuppa. Today, I really aimed to take this British classic and give it a unique twist by adding the slight sourness from the blueberries, along with a zesty touch with some lemon curd! Plus, they look incredibly divine, don't they? Scones are available in virtually every bakery and tea house in the UK, but I just find it extra especial to enjoy them homemade, and fresh out of the oven, given they are incredibly quick and easy to make! Let's get started, shall we? Ingredients
Method In a large bowl, sift your flour and mix in with the salt and sugar. Add the butter and, with your hands, break it into the flour. Once it is well incorporated, add in the milk and squeeze in the lemon. Add your blueberries and roll out into a dough like this. Cover your countertop with some flour to roll out the dough and keep it from sticking. Using a cutter or a glass, cut each scone into shape. Place them onto a baking sheet covered in parchment paper and (optional) beat an egg and brush over your scones and then add a sprinkle of sugar for a nice golden brown texture in the oven. Bake for 10-12 minutes at 180 degrees C or 375 F. Let cool and serve up with some clotted cream and lemon curd. I am using this deliciously sweet and zesty one from Highgrove (click here to shop!) .
