Easy Lemon Pie Ice Cream From Scratch!

Raise your hand if you've got a soft spot for any form of lemon flavoured dessert....Well, if you do, you've come to the right place! I don't think there is a bigger lemon lover out there than me. As soon as those big, yellow, juicy fruits sent from heaven started popping, we were making lemonade, sorbets, lemon meringue pie, lemon mousse, lemon biscuits and, let me tell you, even today, I still don't tire of it! 

Ice cream is something that I recently learned how to make. I always thought you would need some special form of ice cream machine and/or something fancy like a unique kind of fermentation and ageing process for the milk (the same way they make cheese), and only that way you could get that soft and creamy texture. 

Now, you won't believe it but the ice cream and gelato industry have been hiding from us how easy it is to make your own ice cream at home! With just 5 simple ingredients and almost no prep time! Just whip it, flavour it, stick it in the freezer and you're good to go!

​Today I am more than delighted to share this creation of mine based on one of my favourite desserts of all time, that I'm sure you'll absolutely love too.

Ingredients
  • 1 litre of double cream (You may know it as heavy cream if you're not from the UK)
  • ​2 cans of sweetened condensed milk
  • 12 large lemons (this also totally depends how zesty you'd like it)
  • Zest from 6 lemons
  • 1 cup of icing sugar 
  • 300 grams of vanilla biscuits 
Method 
The very first thing you must do is stick your mixing bowl and beaters into the freezer for 30 minutes.
This is a very important step, as the cold is key in making your double cream rise to create a really creamy and thick ice cream. 
Mix your double cream for about 5-10 minutes, at maximum speed. You'll know it is ready once it is thick and peaks have formed.

In a separate bowl, pour in your condensed milk along with your lemon juice and zest.
​Do mix it promptly in order to keep the milk from curdling.

Pour your sweetened condensed mixture into your whipped double cream, followed by your icing sugar. 
Make sure you mix it all very well.

Next is what I think is my favourite part of this ice cream! The cookie crumble! 
I made this with the idea of resembling your typical pie crust, so you actually feel like your digging into an actual lemon pie!

​For this, simply crush your vanilla biscuits, and, in a large bowl, mix in with some of the ice cream mixture you just made!

Finally, pour your ice cream mixture into a large enough container and mix in those cookie bits! 
Don't be afraid to put in all of that vanilla biscuit mixture! That way you get some of it in every bite of your ice cream!

Decorate with some lemon zest and freeze for at least 3 hours before serving!
