We've all had sweet french toast, haven't we? They've become one of the most popular breakfast items of all time. We've perhaps tried them in a number of flavours and presentations and even made them at home a few times. I have to say, even though I love all things sweet and sugar coated, I am not a fan of having sweet for breakfast. Any other time of the day? Absolutely ! ... Just not first thing in the morning. For as long as I can remember, I have been making my egg mixture for french toast in the morning, and adding salt and some herbs, whilst everyone else in my family would add cinnamon and maple syrup. All of a sudden, I had the idea of taking my savory french toast to the next level and created this recipe! Now, here's a little secret. Savory french toast are just as delicious, and maybe even better than sweet ones. You can enjoy these for breakfast, lunch, or dinner....or literally any other time of the day if you're like me. This recipe features a flavour packed french toast, with a side of roasted asparagus and a super rich and creamy hollandaise sauce. Ingredients For the french toast

Method Start by cutting your brioche into thick slices. Chop your sundried tomatoes, onions, and basil. If you decide to add some chilli pepper, then only add a tiny bit! Mix all of your ingredients in a blender, food processor, or a hand blender (like I did), to create a homogenous mixture. Pour your mixture into a large tray or pyrex and let your brioche slices soak for a few minutes. Make sure you turn them around so they sock evenly on both sides. In a frying pan, melt butter with chopped sage for some added flavour Add your french toast on medium-low heat. I let mine cook for at least 3-5 minutes on each side. Whilst your french toasts are cooking, prep your asparagus over aluminium foil, drizzle some olive oil over them, along with some salt and pepper. Let roast in the oven for 10 minutes at 180 degrees C or 350 degrees F. Now its time for hollandaise ! And this is perhaps the easiest, most hassle free recipe you'll ever make! Start by placing your egg yolks, dijon mustard, lemon juice, salt and pepper into a bowl. Using a whisk, beat for about two minutes until it is very well mixed and has thickened a bit. Next, gradually add your melted butter into your mixture whilst slowly whisking it in. You'll notice how your sauce will start to get thick and look like hollandaise. Finally, place in the hob on medium heat for just two minutes. All we want is for the egg yolks to be somewhat cooked. Remove from the heat and add some herbs and cilantro if you'd like.
