Homemade Pear and Gouda Gnocchi !

I don't know about you, but a good, home made Italian dish is one of my greatest pleasures in life. I actually learned how to make gnocchi, along with some other incredible Italian recipes, in a cooking class in Amalfi a few years ago, which is a complete game changer for your tastebuds. Even if I've always been the kind of person who just simply buys store bought pasta, gnocchi, ravioli, sauce...you name it, because it was always easier and quicker. However, since I am currently quarantined, there is no excuse to not be making delicious home cooked meals from scratch. Not only is it far more delicious and healthier, considering it is not packed with all that sodium and preservatives, cooking is an amazing way to keep yourself and your family entertained for hours. So why not give it a go?

Ingredients
  • 6-8 medium Russet potatoes 
  • 3 cups of flour 
  • 1 egg
  • Salt and pepper 
For the seasoning
  • 2 tbsp of olive oil or butter. 
  • 1 tbsp garlic paste or 1 garlic clove
  • 4 large pears
  • Chopped Parsley 
  • Chopped Rosemary 
  • 60 grams of grated Gouda
  • ​1/2 cup white wine 
Method
1. Peel and wash your potatoes and then boil for 20-30 minutes. 
2. Place in cold water for another 30 minutes to let cool.

3. Finely grate your potatoes and, on your counter top, with a fork start mixing with about 3/4 of your flour and add the egg.

4. Once your mix looks incorporated, knee the dough with your hands. At this point, feel free to use more flour if you need to. The idea is for it to be a firm and malleable dough and not a sticky mess.

5. Once your dough is ready, spread out and cut into pieces (about the size you'd like your gnocchi to be).
6. I first roll each little piece into a ball, and then, with a fork, I give it that gnocchi shape.

7. You may need to use some extra flour to ensure your gnocchi is nice and firm.

8. Now its time to cook and season your dish! 
​9. Cook your gnocchi in boiling water for about 2-3 minutes. You'll know they're ready once they float up. 
10. Strain and let cool.

11. Cut your pears into thin slices, grate your cheese, chop your parsley and have ready for the next step!

12. On a pan, place your olive oil, garlic, rosemary, parsley and add your gnocchi. Cook until they start turning a bit golden brown...you'll know😉

13. Add your pears and mix well, whilst letting them turn golden brown as well. 
14. Once your dish look ready add the white wine and Gouda and let melt.

15. Serve and enjoy!
