The most delicious Tomato Sauce Recipe!

​Serves: 3-4
I need to start this by noting how a good, wait, no, an amazing tomato sauce is something that everyone needs to master at some point of their life. Let me tell you, I myself was the kind of gal who would normally just go for your typical store bought tomato paste to whip up with some pasta and done! This was, until a few years ago when I took a cooking class in Amalfi, Italy that just completely changed my taste buds. How did I not think of making my very own sauce considering how easy and 100x more delicious it is; with the additional benefit of it being free of all those added sugars and preservatives. 

So, today allow me to introduce you to what is a truly phenomenal pasta sauce, one that I've made perhaps hundreds of times, and that you'll be able to cook up in just 20 minutes!

Ingredients 
  • 7-8 medium tomatos 
  • 2/3 cup Olive Oil
  • 1/4 cup Balsamic Vinegar 
  • 1 cup vegetable stock 
  • Fresh Rosemary and Basil leaves 
  • 1 tsp Red Pepper flakes 
  • Salt and pepper to your liking
Method
  • Fill up a large pot with water and heat it until boiling point. Cut only the top of your tomatoes into Xs and place them in the boiling water for about 2-3 minutes, until you notice they start to peel. (See photos for reference)

  • Next, Rinse your tomatoes in cold water and remove the peels. They'll come out super quick and easy with this trick!
  • Now that your tomatoes are peeled, chop them into pieces and place them in a large saucepan on a hob on medium heat. Start by adding the olive oil evenly onto the tomatoes, followed by the rosemary, red pepper flakes, garlic, salt and pepper. ​

  • Turn the heat down to medium and stir the tomatoes. 
  • After a few minutes you will see it'll start looking more like a thick tomato paste. 
  • This means its time to add the balsamic vinegar and vegetable stock! Stir both ingredients really well and let the mixture cook for about 5-8 minutes. 
  • Next, add the basil leaves for some extra flavour and freshness. Remove them after 3 minutes
  • Once you have a homogenous mixture, you will notice your sauce still has some tomato lumps. To achieve the perfect consistency, I use a potato masher to compress the sauce.

...And Voila ! You've now made the easiest, most delicious Pomodoro sauce recipe there is! The next step is up to you. I myself like using this sauce for pasta, gnocchi, stuffed portobello mushrooms, Mozzarella sticks and so much more!
