The Perfect Chocolate Crinkle Cookies!

Ok, I've got to start by saying this. These are no ordinary cookies. Your perception of what makes an amazing cookie will change after you try these. 

Where do I begin to describe them? 

It's like the perfect combination of your favourite brownie, chocolate cake and fudgy cookie ! But better.

And the best part is, they are only 7 ingredient and are surprisingly easy to make. So no farfetched ingredients or Martha Stewart baking skills required!

Ingredients 
  • 1 cup all-purpose flour or white whole wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar 
  • 1/4 cup vegetable (or canola) oil
  • 2 large eggs
  • 1 teaspoon vanilla extract​
  • 1 cup icing sugar, for coating the cookies
Method
In the bowl of a stand mixer, add the oil and granulated sugar. Beat on medium-high speed for 2 minutes, or until the mixture is light and fluffy.

Add in the eggs, beating on medium-low speed until combined.  Add in vanilla, beating on medium-low speed until combined. ​

In a medium bowl, whisk together the flour, cocoa powder, baking powder and salt until combined.
Then gradually add in your egg and sugar mixture, and beat on medium-low speed until combined.

Now, here comes A SUPER IMPORTANT STEP ! Or else your cookies won't be the same !

You will notice that, at this point, your mixture will look a lot like cake or brownie batter, not really cookie dough, right?

Which is why you must place your mix in a container and keep it in the freezer for about two hours for it to become solid! 

Other recipes would just include more flour to make the dough thicker and place it straight in the oven.

But my method insures that wonderful brownie feel and chewy texture! Totally worth the wait!

Once you take your batter out of the freezer, it will be consistent enough for you to roll into balls. If not, then leave it in a while longer. 

Cover your cookie dough balls in icing sugar and place them, nicely spread out, in a baking sheet with parchment paper so they don't stick.

Bake for 10 minutes at 180 degrees C or 350 degrees F. 

​Let cool for about 15 minutes and serve!
