Some of the greatest memories I hold in life are around baking. Particularly Holiday Baking. Nothing could possibly beat the glorious smell of cinnamon and gingerbread all around the house whilst listening to Christmas carols on a cold December's day! I feel that this year, with all that has been happening, Christmas in a way feels a lot more special, now that 2020 has made us appreciate everything in a different way. I feel that December can often be so stressful for everyone, as we commonly feel the pressure to meet up, attend events, parties, travel, host family, etc. Something undeniable about this year, is that it's been all about being in pyjamas, lots of online shopping, cooking, baking and plenty of family time. Today I am so happy to be sharing with you a Christmas staple in my home, that captures the flavours and essence of the season in one bite! This is one of those recipes that is super easy and quick to make and absolutely never fails to delight. You can enjoy them at home whilst watching a film, or pop them in a bag with a ribbon for the perfect holiday gift or souvenir! So let's get started! Shall we? Ingredients
Method In a food processor or blender, mince your walnuts until they reach a crumbly, power-like texture. In a separate bowl, mix in your walnut powder, along with your granulated sugar, flour and all your spices ! Now, melt your butter and pour it into your dry ingredients mixture, along with the vanilla essence. It should look like a thick dough, for you to form little cookie balls. Feel free to add a bit more flour if you feel your dough is not thick enough. Roll your dough into little balls, I used this cookie scoop to measure them evenly, you could also weight them to make sure they come out the same size. After all, these cookies have a rustic feel, so no need for them to look perfect. Once you've got your little cookie balls, cover them in icing sugar and place them in a baking tray with parchment paper. Bake for 12 minutes at 180 degrees C, or 350 degrees F. Let cool for at least 10 minutes, and then serve. I hope you enjoy this incredibly delicious and easy creation of mine to make and enjoy with your family this Christmas!
