Growing up I dreamed of opening an ice cream parlour. I have always been the biggest sweets and baking enthusiast and I always imagined having a place of my own to share my creations with the world. I envisioned it in various shades of bubblegum pink and turquoise, with wallpaper covered in sprinkles and neon signs on the walls. I would display an array of the most exquisite ice cream flavours along with cakes and macarons! Perhaps every little girl's dream if you ask me! Fast forward 20 years, no ice cream parlour, but still I'm lucky enough to be able to share my ice cream creations with you through this wonderful platform! Plus, you won't believe how easy they are to make. Make one base mixture, divide it into seven, add one or two items to give it flavour and voilà ! No farfetched ingredients nor fancy ice cream machines required, whilst sure giving Ben & Jerry's a run for their money... Just think how wonderful it would to be able to give your family or your guests this wide array of options, that you made from scratch! The very first thing you must do is stick your mixing bowl and beaters into the freezer for 30 minutes. This is a very important step, as the cold is key in making your double cream rise to create a really creamy and thick ice cream. Mix your double cream in a large bowl for about 5-10 minutes, at maximum speed. You'll know it is ready once it is thick and peaks have formed. Add the sweetened condensed milk. This this is a large quantity of mixture, if you do not have a large enough bowl to beat it all comfortably, you can split it in two bowls and mix separately. Mix for another two minutes and add your icing sugar. Mix until well incorporated. Gather 7 different bowls and containers to create each separate ice cream flavour and divide your mixture into each one.
You'll need:
Using either a regular or immersion hand blender, blend together the pulp from your passion fruit until the seeds are left tiny bits. Before adding this to your ice cream base mixture, you could strain out the seeds. I however, like the crunchiness it gives it! Feel free to use some yellow food colouring to bring out its beautiful bright colour! 2. Mint Chocolate You'll need:
Chop your chocolate bar into small bits (you could also just use chocolate chips, but I prefer the bigger chunks). Add mint extract to your ice cream base mix, drop by drop, to make sure the flavour doesn't end up too strong and tasting like mouth wash. Mix in your chocolate chunks and mint base, and add to your container. 3. Strawberry Shortcake You'll need:
Chop up your strawberries into bits, add into a blender along with the water and sugar, and puree. Mix with your ice cream base mix. Add into your container, mixing your ice cream mixture with your cake or biscuits. If you'd like, add some strawberry bits on top to decorate. 4. Blueberry Shortcake You'll need:
Mix with your ice cream base mix. Add into your container, mixing your ice cream mixture with your cake or biscuits (I created this fun swirl with some of the plain ice cream base I had). Add some blueberry bits on top to decorate. 5. Raspberry Brownie
In your blender, puree your raspberries, water and sugar. Add your ice cream base mixture In your container add a layer of your raspberry ice cream mix, followed by lots of bits of brownie. Repeat. 6. Pistachio You'll need to make a Pistachio Paste for this, click here to buy it, or keep reading to make it yourself. I also added some green food colouring. Homemade Pistachio Paste
In a food processor, start by mixing your pistachios and make them as powdery as possible. Next, add in the olive oil and icing sugar, and keep mixing until it looks like a paste. Mix in with your ice cream base and transfer to your container. 7. Peanut Butter Brownie You'll need:
Mix the peanut butter with your base ice cream mix. In your container add a layer of your peanut butter ice cream mix, followed by lots of bits of brownie. Repeat. Leave all of your Ice cream containers in the freezer for at least 3 hours before serving! Enjoy!
